<ul><li><b>Pasta shells - 1/2 a box</b></li>
<li><b>Olive Oil - 1 tbsp</b></li>
<li><b>Cumin seeds - 1 tsp</b></li>
<li><b>Onion - 1/2 ~ chopped in fine cubes</b></li>
<li><b>Salt - to taste</b></li>
<li><b>Ginger-Garlic paste - 1 tsp</b></li>
<li><b>Turmeric powder - 1/4 tsp</b></li>
<li><b>Indian green chilli - 1 ~ chopped fine</b></li>
<li><b>Red chilli powder - 1/4 tsp ~ (optional) to taste</b></li>
<li><b>Coriander powder - 1/2 tsp</b></li>
<li><b>Fish curry powder - 1 tbsp</b></li>
<li><b>Garam masala powder - 1/2 tsp</b></li>
<li><b>Tuna in water - 2 cans</b></li>
<li><b>Spinach - 1/2 of a frozen box</b></li>
<li><b>Peas - 1/2 cup</b></li>
<li><b>Butter - 2 tbsp & Flour - 2tbsp + water ~ for pasta sauce</b></li>
<li><b>Cheese - 1/2 cup for pasta ~ and enough to layer</b></li>
<li><b>Bread Crumbs - enough for one layer</b></li>
<li><b>Parsley - handful</b></li>
</ul><br />
<b>Method</b><br />
<b>1. Boil pasta in salt water till nearly done, drain and keep. Heat oven to 350F.</b><br />
<b>2. Heat 1 tbsp olive oil. Add cumin seeds - heat until they dance.</b><br />
<b>3. Add and brown onions (add pinch of salt to cook faster), add ginger-garlic paste, cook for 30 seconds or so.</b><br />
<b>4. Add turmeric powder - mix. Now add green chillies, red chili powder, coriander powder, fish curry powder, garam masala powder - mix and cook for a min. Add tbs of water if it threatens to burn.</b><br />
<b>5. Add and cook tuna in above masala mix for 2 mins.</b><br />
<b>6. Add the thawed spinach and the peas and cook for a min. Do not over cook.</b><br />
<b>7. For pasta sauce: Add 2 tbsp butter to a pan, melt, then add 2 tbsp flour, take off the pan and mix in so no lumps form. Add some water, keep stirring and place back on low heat. Keep stirring until nice and thick pasta sauce is made.</b><br />
<b>8. Place pasta in a greased baking pan, add and gently mix in the tuna mixture. Mix in the grated cheese. </b><br />
<b>9. Pour the pasta sauce evenly over top. Evenly add bread crumbs in a layer on top. Sprinkle some cheese and arrange the parsley.</b><br />
<b>10. Bake for 45-50 mins.</b><br />

<li><b>Evaporated milk - 1 5fl. oz. can ~ sub for half in half or heavy cream</b></li>

<li><b>Cheese - 1/4 cup ~ use romano - I used pepper jack for a bit of spice</b></li>

<b>1. Bring salt water to a boil. Add fettuccine noodles, cook till done, and drain.</b><br />
<b>2. Heat olive oil, fry up garlic pcs, mushrooms, then add green onions and continue frying for 3-4 mins.</b><br />
<b>3. In a separate pan melt butter, add evaporated milk and whisk a bit. Add salt and pepper and mix.</b><br />
<b>4. Add the flour and whisk well, till no lumps are formed.</b><br />
<b>5. Now add cheese and continue whisking. Add a dash of milk for more sauce and adjust pepper and salt. Bring to a boil and simmer.</b><br />
<b>6. Add into sauce the fried garlic, mushroom, green onions and continue whisking.</b><br />
<b>8. Serve hot.</b><br />

<b>1. Cut beef into medium thin cubes and place in bowl to marinade.</b><br />
<b>2. Without oil, roast the first batch of ingredients for about 5-6 mins. Then grind in a mortar pestle and rub all over meat.</b><br />

<b>4. Heat olive oil in a pan, and splutter mustard seeds.</b><br />
<b>5. Now add both types of onion and cook until golden brown.</b><br />
<b>6. Add the turmeric powder, garam masala mix well, then add curry leaves. </b><br />
<b>7. Add the tomatoes and cook for at least 5 mins. Now add the coconut pieces and cook until you can smell the coconut aroma.</b><br />
<b>8. Now place beef into this mixture and fry in med-low heat, being very careful to mix well, for 30-40 mins. until meat color changes to a dark brown! Add a splash of red wine within 5-10 mins. of frying meat.</b><br />

I decided to bake a real coffee cake with coffee in it and practically just modified my basic vanilla cake recipe, from a few weeks ago. The result was nice! The coffee flavor was subtle so more can be added per taste. Also, walnuts (which I didn't have) can be added for a nice variety. Enjoy this cake with a coffee beverage or just on its own.</b></i><br />

<b>1. Heat oven to 350F. Add sugar to melted butter and whisk until it looks and feels light and fluffy. I literally hand-whisked 200 rotations!</b><br />
<b>2. Drop in eggs one by one and continue whisking.</b><br />
<b>3. Add vanilla, then strain in flour, baking powder and soda. Mix well, then add yogurt to form a thick batter.</b><br />
<b>4. Place half of the above batter into a greased/floured 8" pan - leave gaps in between.</b><br />
<b>5. Mix the instant coffee with the hot water and add this to the rest of the flour in bowl with batter for a chocolaty-brown color.</b><br />
<b>6. Now add the chocolate colored batter in the gaps you left previously in the batter in 8" pan - it should look like a checker board.</b><br />
<b>7. Take a fork or knife and gently swirl the batter once or twice.</b><br />
<b>8. Bake in oven for 35-40 mins. Check at 30 mins.</b><br />

<b>1. Heat oil and then brown onions. Add ginger garlic paste and cook for at least 8 mins.</b><br />
<b>2. Add tomatoes and again cook for another 5-8 mins.</b><br />
<b>3. Add turmeric, red chilli powder, garam masala, meat masala and cook for another 6-8 mins.</b><br />
<b>4. Place goat meat in pan, then add salt and fry up for 4-5 mins.</b><br />
<b>5. Pour in the water (more water for more gravy but meat will also add to the gravy), simmer for about 15-20 mins with lid on. Stir in between.</b><br />
<b>6. After meat has fully cooked, simmer covered, and turn off stove.</b><br />

<li><b>Garlic cloves - 6 large pcs</b></li>

<li><b>Salt and ground black pepper - a few tsps.</b></li>
<li><b>Dry basil - a good tbsp ~ fresh basil is better</b></li>
<li><b>Green chillies - 1 ~ finely chopped</b></li>
<li><b>Red pepper - 1/2 of one ~ finely chopp</b></li>
<li><b>Yellow onion - 1 small - chopped thin lengthwise</b></li>
<li><b>Roma tomato - 1 small</b></li>
<li><b>Chilli-ready diced tomatoes - 1 can</b></li>
<li><b>Chicken Broth - 1/4 Cup</b></li>
<li><b>Olive oil - a few drops</b></li>
<li><b>Rosemary - 1 stalk ~ rip up</b></li>
<li><b>Thyme - 1 small stalk ~ rip up</b></li>

<b>Method</b><br />
<b>1. Preheat oven to 350F</b><br />
<b>2. In salt water, cook pasta and drain. In another dish, cook potatoes with whole lime and garlic cloves for 12 mins. Drain and toss so the sides are rough. Take the lime and garlic cloves out and puncture the lime a few times.</b><br />
<b>3. Rub chicken with salt and pepper and place in fridge. I skipped this step and instead smeared chicken in stage 5.</b><br />
<b>4. In a 8x11 pan, layer with canned tomatoes, then add a bit of chicken broth. Now add the lime and garlic pcs.</b><br />
<b>5. Add the chicken legs (smear with pepper and salt if haven't already marinaded in 3.). Add a bit of olive oil to chicken.</b><br />
<b>6. Add onions, red pepper, tomatoes, green chillies.</b><br />
<b>7. Now add potatoes on and around the pan.</b><br />
<b>8. Sprinkle the basil, then add rosemary and thyme over the potatoes.</b><br />
<b>9. Place in oven for 45 mins (potatoes get roasted very well]). Bring chicken to the top and roast. After another 45 mins. turn chicken around and place in oven for another 30 mins. </b><br />
<b>Total cook/roast time = 2 hrs. </b><br />

This incredible man began his food revolution in the UK and now has come to the USA to continue his work. He strives to bring healthy food consumption to schools and portrays affordable ways to buy and cook food good for families, the general public, and especially for those who are struggling with weight and other health issues. His Season 1, Episode 4 had my mouth watering as he had 1,000 people cook delicious stir fry, and other goodies, according to a bet he had made to win over a previously antagonistic radio show host. Needless to say, after much struggle, he made a new friend and began the food revolution with a bang! <b>Method</b><br />
<b><i>Part One</i></b><br />
<b>1. Boil water, then add Egg Noodles and salt and cook for a few minutes. Stir every so often, drain, and place aside. Be careful, these noodles cook quite fast.</b><br />
<b>2. Heat about 2 tbsp oil in non-stick (heavy bottom) pan. Add the sliced garlic, then ginger, then half the green chillies and cook for a minute. </b><br />
<b>3. Add the beef and cook for just under 4 mins. (depends on quantity/amt. of meat).</b><br />
<b>4. Add the beansprouts and good splash of soy sauce, then sesame oil, then half the lime juice in the latter half of cooking. Be careful not to overcook the meat.</b><br />
<b>5. Place all the cooked ingredients above into a bowl for later.</b><br />
<b><br />
</b><br />
<b><i>Part Two</i></b><br />
<b>6. Now place the same pan back on the stove and heat about 1 tbsp oil. </b><br />
<b>7. Add the Onions, spring onions, add mushrooms (cook for a min.), add ginger garlic paste and cook for a few secs.</b><br />
<b>8. Now add the other half of green chillies, carrots, red pepper, corn, sugar snap peas and cook for a good 2-3 mins. Toss and stir frequently.</b><br />
<b>9. Add the noodles and toss and stir frequently until everything mixes very well for about 3 mins.</b><br />
<b>10. Place noodles vegetable mix into a dish and squeeze the other 1/2 lime juice over it.</b><br />

<b><i>Part Three and Four</i></b><br />
<b>11. Place the meat with juices back into the pan onto the stove and heat for a bit (don't overcook). Add the coriander to this mix.</b><br />
<b>12. Arrange meat dish on top of the noodles with juices evenly poured over top. Garnish with coriander stalk.</b><br />

<b>1. First add pasta to water and start boiling since this takes a while. Some people add a pinch of salt in hopes of cooking it faster. </b><br />
<b>2. Heat oil and add onions. Add a dash of salt for the onions to cook faster.</b><br />
<b>3. Add the green chillies. Mix and cook for a few mins. </b><br />
<b>4. Now add the dry spices, turmeric, pepper powder, garam masala, and dry basil and cook. <span class="Apple-style-span" style="font-weight: normal;"><b>Add a tsp of water if it threatens to burn.</b></span></b><br />

<b>3. Knead the dough for a min., then create tennis size balls which you should thinly roll out with a rolling pin.</b><br />
<b>4. Cut diamond shapes with a large knife (or whatever knife works).</b><br />
<b>5. Heat oil in a large pan, and place diamond cut slices into it until it browns. </b><br />

<b>~I like to shallow fry, unless I really have to use more oil for something. This snack is quite healthy and palatable. </b><br />

<li><b>Water - optional ~ add more for more sauce</b></li>
</ul><b>Method</b><br />
<b>1. Hard boil eggs. </b><br />
<b>2. Saute onions in oil - add a bit of salt to cook them faster until translucent. Add cinnamon stick after one to two mins.</b><br />
<b>3. Add ginger garlic paste, fry a bit, then add curry leaves, fry again.</b><br />
<b>4. Now add the chicken 65 masala, and red chili powder.</b><br />
<b>5. After about a min. or two, add the tomato paste and mix well.</b><br />
<b>6. After another min. add the ketchup and keep mixing.</b><br />
<b>7. Now add the coriander leaves and mix those and then add salt to taste. Continue to mix well so that the masala does not burn. Add a tiny bit of water if you have to.</b><br />
<b>8. After everything is mixed into a nice flavorful paste, cut eggs in half and add with yolk facing down. Slowly turn the eggs after a min. or two so that all sides will fry nicely in the masala. Be careful so that it doesn't burn.</b><br />

I didn't have this in my early experimentation of Indian food but today it is a precious and very useful component of the artistry. Each little bowl holds the spices I use most and since this picture was taken, it has been re-arranged. At home, in India, a lot of the spices are prepared fresh off the stone, and finely powdered over the fire. Alas, that is not the case in my kitchen, so I have bought most of these spices at the Indian store. <b>4. Add green pepper and carrots and fry for 2-3 mins, until peppers are slightly cooked.</b><br />
<b>5. Now add the whisked eggs, cook, then scramble.</b><br />
<b>6. Add the pepper powder and some salt, as needed.</b><br />

Why not give this ancient computer a cleaning! Slowly I lifted off the keys, one section at a time. There were frequent trips to the coffee water heater next door. I could see rainbow colored fuzzies wrapped under the longer “Backspace,” “Enter,” and “Caps Lock” keys. And then there were the extra fine, short hairs scattered everywhere. I knew they couldn’t be mine but they looked suspiciously familiar. Aha! I thought. One eyeball looking yellow spot near the “4” drew my attention and I saw some dingy yellow, paint-like coloring towards the “H,” undeniably both symptoms of the soupy masala maggi noodles, a favorite evening meal a few years ago. Returning the keys to their original positions would have been difficult, and my memory would have failed me, had I not cleverly created a false keyboard with the separate keys on the table beside me. Unfortunately there were a few casualties.
